Phosphoenolpyruvate (PEP) is an important intermediate in carbohydrate metabolism in the process of glycolysis and gluconeogenesis. In plants and microorganisms, PEP is also involved in the biosynthesis of various aromatic compounds (shikimate pathway), and in carbon fixation. In bacteria, it is used as the source of energy for the phosphotransferase system. In this assay the PEP is converted to pyruvate, which is quantified colorimetrically or fluorometrically.
